Sautéed Spinach

 

1-2 bunches fresh spinach

1 small onion

1 large garlic clove

Olive oil

Salt

Pepper

 

Wash spinach leaves and pat dry with paper towel.  Put a small amount of olive oil in pan over medium heat.  Add onions and sauté for one minute.  Add spinach leaves and sauté for 1-2 minutes, then add garlic and cook for 1 minute more.  Add salt and pepper to taste.  Remove from heat and serve.
