Oxtails

Onion, chopped

Celery, chopped

Seasonings (such as garlic or onion powder, Old Bay Seasoning, lemon pepper, etc.

Flour

Cooking oil

Water

 

Wash oxtails.  Season the oxtails with your choice of seasoning, then coat with flour.  Lightly brown the oxtails in a heavy skillet or Dutch oven.  Place oxtails in a pressure cooker.  Add onion and celery, and seasonings of your choice, if desired.  Add enough liquid for the amount of oxtails you are cooking (read pressure cooker instructions).  Place top on pressure cooker and secure according to operating instructions.  Cook for the amount of time recommended in your pressure cooker instructions.

 

NOTE:  This is the easiest and quickest way to cook oxtails.  This method will produce tender meat with its own delicious gravy.  You can experiment adding other ingredients such as green pepper and fresh tomatoes.
