Homemade Pancakes

1 egg

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon sugar

1 cup buttermilk

2 tablespoons vegetable oil

Home Maple Syrup

 

Beat egg.  Combine flour, baking powder, soda, salt, and sugar; add to egg.  Add buttermilk and oil, beating until mixture is smooth. 

 

For each pancake, pour about ¼ cup batter onto a hot, lightly greased griddle.  Turn pancakes when tops are covered with bubbles and edges look cooked.  Serve with Homemade Maple Syrup.  Yield:  8 (4-inch) pancakes.

 

Homemade Maple Syrup

1 cup water

2 cups sugar

½ teaspoon maple flavoring

 

Bring water to a boil in a 1-quart saucepan; add sugar and maple flavoring, stirring to dissolve.  Cook 1 to 2 minutes, stirring constantly.  Remove from heat.  Leftover syrup may be stored in refrigerator.  Yield:  2 cups.
