Making A Good Stew

Beef stew meat

Seasoning

Flour

Cooking oil

Onion

Celery

Green bell pepper

Red bell pepper

Vegetables (mixed vegetables, carrots, potatoes, okra, corn, tomatoes, etc.)

Water

 

Season meat with choice of seasonings.  Can be as simple as salt and pepper.  Some other seasonings might include onion powder, garlic powder, Old Bay Seasoning, lemon pepper, etc.

 

 

Coat meat with flour.

 

Lightly brown meat in Dutch oven or heavy pot with oil.

 

Sauté onion, celery and peppers in oil, about 3-4 minutes.

 

 

Add sautéed vegetables to Dutch oven with meat.

 

 

Add enough water to more than cover the meat and vegetables.

 

Bring to a boil, then lower to medium-low heat and cook until meat is tender.  Depending on the grade of beef, cook 1-2 hours. 

 

Add more water if necessary

 

Add vegetables (mixed vegetables, carrots, potatoes, tomatoes, okra, corn)

 

Cook for 10-15 minutes or until vegetables are done.

 

TIP:  For a more traditional stew, add only carrots and potatoes to the cooked stew meat.

TIP:  If desired, other seasonings can be added, such as hot sauce and Worcestershire sauce. 

TIP:  There are no hard rules on what to put in a stew or soup pot.
