3 medium sweet potatoes, baked
1/2 cup butter
1 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs, beaten
1/2 cup whole milk or evaporated milk
1 9-inch unbaked pie crust

Remove peelings from baked potatoes. Mash potatoes.Add butter, sugar, vanilla extract, eggs and milk. Mix until well blended.Pour potato mixture into unbaked pie crust. Bake at 350 degrees for 45 minutes.Remove from oven and let cool for 10-15 minutes. Serve warm or at room temperature.
